From the rugged tin mines of 19th-century Cornwall to street food stalls across six continents, the hand pie is one of the most universal and enduring foods in human history.  Portable, satisfying, and endlessly adaptable, these handheld pastries tell the story of the people who made them — their geography, their labor, their ingenuity, and their taste.

In this demo-style class, culinary educator and gastronome Lamour Workman traces the fascinating global lineage of the hand pie, beginning with the iconic Cornish pasty — a hearty filling of meat, potato, and vegetables crimped inside a golden crust, designed to sustain miners through long shifts underground.  From there, we'll explore how cultures around the world developed their own beloved versions, each shaped by local ingredients, traditions, and culinary identity.
